Cast iron pans

A heavy and durable material, resistant to high temperatures. The pan lasts for generations. These pans don't warp and are oven-safe. Heating up and cooling down takes a bit longer, but once hot it stays hot for a long time. Don't wash the pan in the dishwasher.

Carbon steel pans

Lighter than cast iron and they heat up faster. These pans are seasoned to create a non-stick layer. Warm the pan up after washing to dry it completely. This prevents rust.

Stainless steel pans

Stainless steel is very light and doesn't rust. These pans are also dishwasher-safe. They can withstand high temperatures but cool down quickly.

Copper pans

These pans don't just look stylish, they're also very durable. Good copper unfortunately doesn't come cheap, but the quality is fantastic. Working on professional dishes like sauces, jam or risotto where you need perfect temperature control? Then the copper pan is the perfect choice.

Aluminium pans

At a lower price you give up some quality, but they're very pleasant to use. They're light pans that are easy to clean. They have excellent heat conduction and are therefore ready to use quickly.

Frequently asked questions

  • Which roasting pan can go on the barbecue?

A Dutch oven is suitable for the barbecue if it is made of a material that can withstand high, sometimes uncontrolled heat and has no plastic or synthetic parts. The best choice is an uncoated cast iron Dutch oven or a stainless steel Dutch oven without plastic handles. Enameled cast iron can also work, but pay attention to the brand's recommendations: STAUB is suitable for the grill and barbecue, while Le Creuset advises against using its standard enameled cookware over an open flame. Pans with a synthetic non-stick coating (PTFE/Teflon) or plastic handles are never suitable for direct exposure to a barbecue.

  • Can a Le Creuset casserole dish go on the BBQ?

Le Creuset's regular enameled casserole dishes are not intended for this. Le Creuset advises against using these dishes on irregular heat sources such as an outdoor barbecue, open fire, or pizza oven in its official instructions for use, as uncontrolled heat can irreparably damage the enamel. If you still want to cook outdoors with Le Creuset, there is a solution: the brand has a separate BBQ Outdoor collection that was specially developed for the barbecue and open fire, including the Skillet 'BBQ Outdoor' and various grill plates. If you are looking for an enameled cast-iron casserole dish that is suitable for use on the barbecue, take a look at STAUB.

  • Can I use a STAUB braiser on the barbecue?

Yes. STAUB explicitly states that its cast-iron pans can be used on the grill and barbecue. The enameled cast iron is robust and retains heat exceptionally well, making it ideal for braising and simmering alongside the meat. However, keep the temperature under control and avoid extreme temperature shocks, such as placing a cold pan directly on glowing coals. This will keep the enamel looking beautiful for years to come. View the STAUB Dutch ovens for the models and sizes.

  • Is cast iron the best choice for the barbecue?

For most outdoor applications, yes. Cast iron can withstand extreme heat, retains heat exceptionally well, and gives meat and vegetables a rich brown finish. Uncoated (non-enameled) cast iron is the most robust and can even withstand open flames and intense charcoal heat. The downside is the weight: cast iron pans are heavy, and you’ll notice it when lifting them on and off the grill. If you’re looking for something lighter, a stainless steel roasting pan is an excellent alternative: fully heat-resistant, lighter, and easy to clean.

  • Can I use a Dutch oven over an open fire?

Uncoated cast iron is the only material truly suitable for direct open flames, such as a campfire, open fire, or glowing coals. Stainless steel withstands high temperatures but may discolor with prolonged exposure to an open flame. Enameled cast iron is more sensitive: STAUB cookware can be used on charcoal and gas, but for any enameled brand, avoid direct contact with an open flame and extreme peak temperatures to protect the enamel. Regular Le Creuset cookware is not suitable for open flames; choose the BBQ Outdoor range instead. Cookware with a non-stick coating is never suitable for open flames.

  • Can I make stew on the BBQ in a Dutch oven?

Absolutely, and it produces a particularly impressive result. A cast-iron Dutch oven on the barbecue, especially in a kamado or a kettle with the lid closed, works like a mini-oven and is perfect for beef stew, pulled pork, braised lamb shank, or coq au vin. The smoky flavor subtly infuses the pot and gives your dish an extra dimension. Maintain a constant, low temperature (around 130–160 °C) and keep your barbecue lid closed so that the heat remains even.

  • Which pan fits on a kamado barbecue?

For cooking in a kamado, it is best to use a cast-iron roasting pan, preferably with a lid, for indirect cooking. The kamado is ideal for slow cooking at low temperatures, and cast iron retains that heat perfectly. Pay attention to the size: for most Large kamados (comparable to a Big Green Egg Large), a round roasting pan measuring approximately 24 to 28 cm will fit well on the cooking grate. Choose a pan with solid cast-iron or stainless steel handles, so no plastic.

  • Do I need to season a cast-iron BBQ roasting pan first?

That depends on the type. Uncoated cast iron needs a seasoned layer of oil (seasoning) to become non-stick and protected against rust. Many models, such as the Skottsberg Cast Iron, come pre-seasoned, but it remains a good idea to maintain the layer over time by lightly greasing the pan. Enameled cast iron, such as from STAUB, does not need this seasoning: the enamel coating is ready to use immediately.

  • How do I clean a cast iron BBQ roasting pan after using it outdoors?

Let the pan cool down completely first. Never pour cold water on a hot cast-iron pan, as the temperature shock can cause cracks. Remove large residues with a spatula or stiff brush. Clean uncoated cast iron with warm water without (or with very little) dish soap, so as not to damage the seasoning; dry the pan thoroughly immediately and rub it lightly with neutral oil. This is because rust forms quickly on cast iron that remains wet. Enameled cast iron can be cleaned with warm water and mild dish soap and does not need to be oiled. Want to know more? • Are BBQ grill pans also suitable for induction and the oven?

Yes, most BBQ-suitable roasting pans are multifunctional: they work on gas, induction, electric and ceramic hobs, and are oven-safe. Cast iron is naturally magnetic and therefore works perfectly on induction. That makes a BBQ roasting pan particularly versatile: from the induction stove indoors to the charcoal grill outdoors, and everything in between.

  • Can a cast iron Dutch oven go in the dishwasher?

Uncoated (non-enameled) cast iron should never go in the dishwasher: the detergent damages the seasoning and the pan will rust. Enameled cast iron from brands such as STAUB is technically dishwasher-safe, but hand washing is recommended to preserve the enamel for longer. Stainless steel casseroles are generally dishwasher-safe. When in doubt, hand washing is always the safest choice.

What you need to know about BBQ Roasting Pans

Why use a Dutch oven on the BBQ?

Anyone who thinks a barbecue is only suitable for direct grilling is missing out on half the fun. With a cast iron Dutch oven on the barbecue, you can cook indirectly and directly at the same time: while your meat slowly cooks on the grill, you can prepare a complete meal in the pot. Think of a rich stew next to your ribs, fried onions for your burgers, or a creamy sauce over the coals. A Dutch oven is also ideal for anything that would fall through the grill: vegetables, shrimp, and small pieces of meat. And for dishes that need plenty of moisture and must not dry out. This makes a Dutch oven make your outdoor kitchen much more versatile, without having to stand at the stove indoors.

What material is suitable for the barbecue?

Not every pan can withstand the heat of a barbecue. For direct exposure to fire, charcoal, or the high temperatures of a kamado, you need a pan without plastic or synthetic parts. Uncoated cast iron, such as the Skottsberg Cast Iron, is the best choice for this: it is extremely heat-resistant, can withstand intense charcoal heat and even open flames, and is virtually indestructible. Stainless steel from a brand like Demeyere is also perfectly suitable: heat-resistant, oven-safe, lighter than cast iron, and corrosion-resistant. Pans with plastic handles or a synthetic non-stick coating (PTFE/Teflon), on the other hand, should never be used on a barbecue.

With enameled cast iron, nuance is important. STAUB explicitly states that its cast iron pans can be used on the grill and barbecue, provided you control the temperature and avoid thermal shock. So a STAUB is an excellent choice for a BBQ. For Le Creuset, it is different: the manufacturer advises against using the regular enameled Dutch ovens on irregular heat sources such as an outdoor barbecue or open fire, because uncontrolled heat can damage the enamel. If you still want to cook with Le Creuset on the barbecue, choose the BBQ Outdoor line specially developed for this purpose, such as the Le Creuset Skillet 'BBQ Outdoor' or the Le Creuset grill plate 'BBQ Outdoor'. BBQ roasting pans for kamado, kettle and gas barbecues

The kamado has become popular for outdoor cooking in recent years, and a cast-iron roasting pan is perfect for it. The constant, even heat of a kamado is ideal for slow stewing and braising, and cast iron retains that heat perfectly. On a kettle barbecue (round charcoal barbecue), you usually cook indirectly: the pan on the cool side, the meat above the coals. And on a gas barbecue, a BBQ-suitable pan behaves almost exactly like it does on an indoor gas stove, only with wood smoke or charcoal underneath. Whatever barbecue you use, charcoal, gas or pellet: always make sure that the pan has no plastic handles and no synthetic non-stick coating. Also check out the grill pans for the BBQ if you want beautiful grill marks on your meat in addition to stewing and simmering.

Stewing and simmering on the barbecue

A cast-iron roasting pan with a lid turns your barbecue into a kind of outdoor oven. On a kamado or a kettle with a closed lid, you create an even, enveloping heat that is perfect for stewed beef, pulled pork, a braised lamb shank or coq au vin. The subtle smoky flavour slowly penetrates your dish and gives it a dimension you can never achieve indoors. Keep the temperature low and constant (around 130–160 °C) and keep the lid of your barbecue closed, so that the heat remains even. Many of these pans are multifunctional: they work just as well on induction, gas and in the oven, so you can use the same pan indoors and outdoors.
