The production process: artisanal and natural
From seed to bottle, the entire process is managed by Tomasu. Their soybeans and wheat are grown in the Hoeksche Waard region. These ingredients are then combined with spring water and coarse sea salt. After this, fermentation is initiated by adding Tomasu's own mold, Aspergillus Oryzae Tomasu. The only ingredient added after this is time. The fermentation process takes at least 24 months and occurs in 25 to 50-year-old whisky barrels from distilleries in Scotland. The long fermentation process ensures the fine, deep, and subtle flavor that distinguishes Tomasu soy sauce from commercial varieties.
