This is our Tomasu Salt, made from 'gros sel de Guérande', hand-harvested in Brittany, France. Since this salt is one of our four basic ingredients, it was a logical step to create a soy sauce-infused salt. We fill barrels with the salt and add freshly pressed soy sauce to them. This allows the flavours to slowly meld and mature, resulting in a uniquely flavourful salt.
