De Buyer pans are beloved by French chefs for their even and efficient heat distribution. This 'Carbone Plus' paella pan is also immensely popular. Thanks to its excellent heat absorption, you can quickly sear meat, create a crispy crust, and even prepare stir-fries with ease. The pan, which has no non-stick coating, is ideal for use at high temperatures and in the oven. The long handle is designed to keep your hands away from the heat. A non-stick coating is not necessary: after seasoning and use, the pan develops its own natural non-stick layer.
What is the difference between De Buyer frying pans and paella pans?
It's simple: it's the two handles compared to the single handle on the frying pans. Otherwise, the paella pan and frying pan are virtually identical.
No Artificial Non-Stick Coating
This sturdy pan cooks wonderfully, provided you maintain it properly. Before first use, you must season the carbon steel pan with oil to create its own 'non-stick coating'. The pan will turn black and cook better the more you use it. Keep the pan lightly oiled to prevent rust. Carbon steel is a strong and durable material, allowing this pan to last a lifetime. If rust or other dirt does appear in the pan, it can always be remedied. The pan is virtually indestructible in the kitchen.
Versatile in Use
This paella pan is suitable for all heat sources, including induction and oven use. This makes the pan very versatile and suitable for various cooking techniques.
Maintenance and Use
After use, clean the pan only with hot water and a soft sponge. Use dish soap only when absolutely necessary, as it can damage the protective layer. The pans from De Buyer's Carbone Plus series do not have a beeswax coating like the De Buyer Mineral pans. The beeswax coating makes the first use of the pan a bit easier, but it is not essential.
