"Rain against the windows, phone on silent, pan on the stove. This mash is sweet, salty, bitter and creamy all at once—it might just be your new favorite mash recipe. Slippers on, playlist on, are you ready, chef?" - Lobke

Let's get started!

    1. Peel the sweet potato, cut it into cubes and boil in salted water for about 12–15 minutes until tender. Drain and let it steam for a moment, otherwise your mash will be too watery.
    2. Fry the bacon bits in a dry pan until crispy. Set aside a little fat and the bacon bits.
    3. Roughly mash the sweet potato with a knob of butter or a splash of the oil you just set aside. Mash it well, but leave some texture.
    4. Stir in the pesto. Taste and add salt and pepper to taste.
    5. Fold in the arugula while everything is still warm, then add the sun-dried tomatoes. Sprinkle over the bacon bits and Parmesan, and you're done! Enjoy your meal, chef!

Tip! Do you like a little kick? Sprinkle over some chili flakes.
