Let's get started!
- First, we're going to wet brine the chicken. I used a ready-made brine for this and let the chicken soak in it for 24 hours.
- After 24 hours, we take it out of the brine bath and let it dry for 24 hours in the refrigerator. It's best to do this upright on a rack so the moisture can drain away.
- After 24 hours of drying, we're going to truss the chicken. This prevents anything from hanging loose while it's rotating on the spit.
- Now we're going to mix 4 tablespoons of butter with 4 tablespoons of rub. We're literally going to get under the skin of the chicken! Do this by inserting your finger between the skin and the meat, but be careful so the skin doesn't tear.
- Now apply the butter/rub mixture everywhere you can reach. Use a pastry brush or simply your finger. Then, spread a thin layer of olive oil on the outside and use the remaining rub to cover the exterior.
- Now let the chicken rest in the rub overnight so it can absorb the flavors.
- The next day, we start by roughly chopping all the vegetables. These will go into a pan under the chicken so that the chicken fat drips into the pan with vegetables.
- Thread your chicken onto the spit and insert the Meater into the breast. We heat the BBQ with direct heat and aim for a temperature of 150°C. Once the right temperature is reached, we add 1 or 2 cherry wood blocks between the coals for a delicious smoky flavor.
- We place the pan with vegetables about halfway under the chicken.
- After 45 minutes, use your thermometer to measure the breast and wings; the breast should be 70°C and the wings 85°C.
- If these haven't been reached yet, but are close, you can now also use the delicious sauce to baste the chicken. If you do this before the core temperature is reached, you'll get a sticky sauce.
- When everything is ready, sprinkle some pepper over the vegetables. Let the chicken rest for 10 minutes before slicing it. Enjoy your meal!
