The pros and cons of copper pans.

Thinking of buying a copper pan? Then first check out all the pros and cons we describe in this article.

You've probably seen them in specialized stores, those beautiful copper pans that every visitor admires. They look stunning with their shiny copper glow. They often feature classic handles and rounded shapes, but modern designs are also available these days. In this article, we'll tell you more about the pros and cons of copper pans.

Copper pans: beloved by professionals.

In the best (French) kitchens, you'll always find a few on the stove, because copper pans are loved by professional chefs. The reason is that copper pans heat up very quickly and distribute heat very well throughout the entire pan. Both the bottom and the sides heat evenly. The even heat distribution and the very quick heating and cooling of copper pans make them the perfect material for preparing sauces, jams, and risotto, for example.

The advantages of copper pans.

Before buying a copper pan, you want to know why you should or shouldn't. That's why we've listed the pros and cons below.

  • Copper is a very durable material, especially resistant to temperature changes. This reduces the risk of thermal shock.

  • After gold and silver, copper is the best heat conductor in the world. With a copper pan, you have enormous control over the preparation of your dish.

  • Aesthetic appeal matters too! Copper pans are incredibly beautiful and are real eyecatchers on your stove.

  • Did you know that copper pans are very durable? With proper use, your new copper pan can last a lifetime.

The disadvantages of copper pans.

  • A copper pan requires regular and proper maintenance. At least, if you want to maintain its shine. Oxidation eventually dulls copper, but this can be easily remedied by occasionally polishing the copper pan with copper polish.

  • Copper is a soft material, making it somewhat more prone to dents and scratches. Keep this in mind during cleaning. Use a soft cloth instead of a scouring pad or brush. If you store your copper pan in a cupboard, always use pan protectors.

  • Copper itself is not magnetic, so it's not immediately suitable for induction. However, there are also copper pans with an induction base, making them usable on induction. The DUCQ copper pans are fully suitable for use on an induction hob.

The advantages of copper pans

Are copper pans expensive?

We can be brief and to the point here. Yes, copper pans are generally more expensive than pans made from other materials like stainless steel and sheet steel. This can be a hindrance for people with a limited budget.

How do you maintain copper pans?

If you've splurged on a beautiful copper pan, you'll want to enjoy this purchase for a long time. That's why we're giving you some tips for properly maintaining your copper pan.

  • Regular cleaning: After use, clean your copper pan thoroughly with warm water and, if necessary, a mild soap. Avoid abrasive scouring pads that can cause scratches. Do you have stubborn residue? Put the pan back on the stove with some water and let the residue soak off.
  • Dry the pan immediately: After washing, you must dry the copper pan immediately with a soft cloth to prevent water stains and oxidation.
  • Polishing: To maintain the shine of the copper pan, you can regularly use a copper polish. You can also use a homemade paste of vinegar, salt, and flour to polish the copper. Apply a little of the paste to the pan, rub it in with a soft cloth, and then rinse thoroughly with water before drying it.
  • Avoid exposure to acidic foods: Avoid cooking acidic foods, such as tomatoes or citrus fruits, in copper pans, as this can lead to discoloration and flavor transfer. If you do cook acidic foods, make sure the pan is thoroughly cleaned after use.
  • Prevent scratches: Do not use sharp metal spatulas or scouring pads that can cause scratches on the surface of the copper pan. Instead, use wooden or plastic utensils.
  • Storage: Store copper pans in a dry place to prevent oxidation. If you stack multiple pans, place pan protectors between each pan to prevent scratches.

Copper pans

Copper pans with stainless steel interior.

As described above, acidic food, when brought into contact with copper, can discolor and taste different. Not ideal if you ask us, because if you buy an expensive copper pan, you want to be able to prepare virtually anything in it. For this, you can also buy copper pans with a stainless steel interior. The outer layer of the pan is made of copper, ensuring perfect heat conduction. The inner layer made of stainless steel ensures that you can prepare anything in it. With DUCQ pans, there's also an aluminum interlayer, as this is also a very good heat conductor.
