Let's get started!

  1. Prepare the BBQ for indirect heat of approximately 180-200°C.

  2. Dice the onion and tomato.

  3. In the skillet, create multiple layers of tortilla chips, cheese, and toppings.

  4. Repeat the layers so that the toppings and cheese are well distributed.

  5. Lightly sprinkle the top layer with Angus & Oink rub for extra BBQ flavor.

  6. Place the skillet indirectly on the BBQ and close the lid.

  7. Cook for 10 to 15 minutes until the cheese is melted.

  8. Remove the skillet from the BBQ and top with crème fraîche, spring onion, coriander, and possibly jalapeño.

  9. Serve in the skillet.
