Let's get started!
- Rub a sturdy pan with garlic (on the inside, of course). Add the wine, stirring, and bring to a simmer over medium heat.
- Reduce the heat and add the cheese, stirring. Stir the cheese until melted. Allow the cheese to melt very slowly, for at least 5 minutes, so it doesn't become tough.
- Add the cornstarch mixture with a little salt and pepper. Let it simmer for about 2 minutes. Note: the fondue should not come to a boil.
- Serve the cheese fondue in a pan kept warm by a flame. This keeps the cheese melted, otherwise, it becomes difficult to fondue.
