Let's get started!

  1. Heat your BBQ to 200°C and also heat a skillet. Meanwhile, finely chop the red onion, bacon, and chives. Cut the Secreto into 4 nice, equal pieces and remove the large pieces of fat from the meat.
  2. Whisk the eggs and pour them into a deep plate. Put a layer of flour and breadcrumbs into two other deep plates. Add a good amount of pork rub to the breadcrumbs and mix well.
  3. Fry the onion and bacon in the skillet. Is your bacon crispy and the onion translucent? Then remove them from the pan.
  4. Pour a layer of sunflower oil into the skillet and let it heat up.
  5. First, dredge your Secreto in the flour, then the egg, and finally the breadcrumbs. Press the breadcrumbs on well. Now place your schnitzel in the oil and fry on both sides until a beautiful golden-brown crust forms.
  6. Top your schnitzel with a generous scoop of onion and bacon. To finish it off, sprinkle some chopped chives over it. Enjoy your meal!
