A plate full of sweet potato goodness; we like that! This dish is not only a feast for the eyes, but it's also super simple to make. With just five ingredients and a little love, you can conjure up a warm plate of comfort food in no time. Perfect for a cozy evening on the couch, with the sound of rain against the windows and a good glass of wine within reach. And the best part? The sweet potato with goat cheese and honey tastes like you've been slaving away in the kitchen for hours, while in reality, it took you no more than 15 minutes. So slip into your comfy clothes, put on your favorite playlist, and let's go!

Let's get started!

  1. Wash the sweet potatoes, pat them thoroughly dry with a tea towel, and prick holes in the skin with a fork. Microwave the potatoes for 8 minutes on the highest setting. No microwave? No problem. You can also bake them in the oven; then you need to heat them for about 45 minutes at 190 degrees Celsius. Easy peasy!
  2. Heat a drizzle of oil in a frying pan and sauté the spinach for about 3 minutes until it has wilted. Season with a pinch of salt and pepper.
  3. Meanwhile, roughly chop the pecans.
  4. Cut open the sweet potatoes and fill them with the spinach. Crumble the goat cheese over them and finish with honey and pecans.
