  1. Halve the fennel bulbs and remove the tough core. Then slice thinly with a sharp chef's knife for nice, even slices.
  2. Combine fennel, orange segments, red onion, arugula, walnuts, and pomegranate seeds in a large bowl.
  3. In a small bowl, whisk together the olive oil with white wine vinegar (or lemon juice), honey, salt, and pepper until a smooth dressing forms.
  4. Pour the dressing over the salad and toss everything well. Garnish with fresh dill. Enjoy!

 

Tip
